Pumpkin Spice Clean Cookies


1/2 cup pepitas
1/2 cup almonds
1 tsp cinnamon
1 tsp turmeric latte powder (optional)
1tsp vanilla extract
1/4 cup honey/maple syrup
1 cup puréed pumpkin (steam then blitz in a blender)
1 cup quick oats (could use rolled but I only had quick)
1 heaped tbsp coconut flour
1 egg

1. Preheat oven to 190 degrees Celsius. 
2. Blitz almonds and pepitas for a second in a blender or food processor until roughly chopped. 
3. In a large bowl place all ingredients and mix until combined. 
4. Spoon onto a lined baking tray and pop into oven for 20-25 mins.

Makes 18 cookies. Store these in the fridge as they are quite dense and moist (they taste amazing cold!!).  Only 67 cals per cookie and full of fibre to keep you full. Perfect to have with a cuppa in the afternoon as your snack or for the kids lunch boxes to sneak in some veggies!
