Low FODMAP Blood Orange & Macadamia Cake

Having to do the low FODMAP diet is tough at the best of times but having to do it over Christmas is the pits! I feel especially here in Australia where Christmas is a time of plentiful cherries, mangos and lychees. So rather than posting a traditional Christmas dessert, I decided to give back to those who might be stuck on a low FODMAP diet over Christmas with this DELICIOUS macadamia and blood orange cake.

Being gluten-free it is perfect if you’ve got a coeliac in the fam too and I can confirm that even the non-coeliacs love it too.

Ingredients:

200g unsalted butter

2 tbsp extra virgin olive oil

250g caster sugar

100g raw macadamia nuts

50g almond meal

50g desiccated coconut

200g gluten free self raising flour

1/2 tsp gluten free baking powder

5 eggs at room temperature

150g plain greek yoghurt at room temperature

1/2 tsp vanilla extract

2 blood oranges (regular oranges will also work but won’t give the icing that pink colour)

For Frosting:

250g lactose free cream cheese at room temperature

85g butter at room temperature

4 cups powdered sugar (460g)


Method:

  1. Preheat oven to 180 degrees Celsius. Grease and line a 20cm cake tin with baking paper.

  2. Melt butter and add olive oil. Set aside to cool.

  3. Blend macadamia nuts in a food processor until fine crumbs (similar texture to almond meal, a few larger chunks are fine).

  4. Combine macadamia nut meal, almond meal, flour, baking powder, sugar and coconut in a large mixing bowl. Stir to combine.

  5. Make a well in the centre of the bowl and add wet ingredients to mixture. Stir to combine.

  6. Stir through the zest of one orange (about 1 heaped tsp)

  7. Pour cake mixture into the cake tin. Bake for 55 minutes or until a skewer inserted comes out clean.

  8. Remove from tin and allow to cool on a wire rack.

  9. Make the frosting by combining cream cheese and butter into a large mixer bowl and beat until smooth. Add in half the powdered sugar and mix until well combined. Add the juice of 1 blood orange and mix it again. Beat in remaining powdered sugar.
