Pumpkin Spice Oatmeal

Okay so can you tell i've gone a little pumpkin crazy lately? You'd think i'm American with all my pumpkin meals lately. But spring time pumpkins here in Australia are so sweet and delicious and I cannot get enough of them. 

This recipe is super filling so don't expect to need a mid morning snack, plus the fibre, complex carbs and protein act on your appetite hormones to make sure those hunger signals stay at bay. It does take a few more minutes to prepare than a piece of toast but trust me when I say, it is well worth it! 

Ingredients:

1/3 cup pureed pumpkin (I know you can buy canned stuff in the US but I just steam some pumpkin in my microwave then blitz it in the blender - takes 4 mins max!)

1/2 cup quick oats 

1 cup milk of choice (I use almond or lactose free)

1 egg white

1/2 tsp cinnamon 

1 tsp maple syrup 

Method:

  1. If you haven't already make the pumpkin puree (or crack open a tin if you prefer, honestly the real stuff has got to taste better)

  2. Pour about 3/4 of the milk into a bowl with the oats and cook (either on the stove top or microwave) for a few minutes until the milk begins to absorb.

  3. Add the egg white and remaining milk and whisk well. Cook for a further 2 minutes stirring frequently (and adding extra liquid if required).

  4. Add pumpkin puree, cinnamon and maple syrup and stir well.
